Lokma with Prune



Instructions:
# Prepare the dough at first: Pour the warm water into a deep bowl, add granulated sugar and the yeast which is mixed with flour into the warm water. Mix it.
# Add milk, eggs, vegetable oil, salt, vanilla and sifted flour onto the mixture. Mix it, until it smoothens. Rest it at a warm place for half an hour.
# Meanwhile, prepare the syrup: remove the seeds of the plums, add 1 cup granulated sugar and 1 cup water on it. Boil it, until the plums give the color to the mixture.
# Then, place the boiled plums over a colander. Force on them to get its juice. Add 1 + 1/2 cups water, 1 cup granulated sugar and 1/2 cup plum marmalade onto this plum juice. Place this mixture over the heat again and boil it for a while more. Then, remove it from the stove and let it cool down.
# Add the sliced prunes into the rested dough and mix it.
# Dip your palm into the dough. Squeeze the dough between your thumb and forefinger. A piece of dough will appear between these fingers, get it by a spoon and put into hot oil. Finish the dough by this way. Fry them with golden yellow color. Then place them onto the paper towel.
# Cool them for a while to turn into tepid. Then, place them into cold syrup. Rest them in syrup for 15 minutes, then place them onto the service plate.
# Sprinkle coconut all over to garnish them.


Note: Sour cherries or dried sour cherries may be used instead of plums or prunes also.

1 cup milk
1 cup water
1 pack yeast, fast type
1 tsp granulated sugar
10 – 12 prunes, chopped
1 tbsp vegetable oil
2 + 1/2 cups flour
1 pack vanilla
1 tsp salt

For Frying:
2 cups vegetable oil

For the Syrup:
1.10 pounds red plums
2 cups granulated sugar
2 + 1/2 cups water
1/2 cup plum marmalade

For Garnish:
1 tbsp coconut
